Bangladesh country guide Food and drink

What local dishes should I try in Bangladesh, and where should I look for them?

The short answer

Ilish — hilsa — cooked in mustard, and the rice it is eaten with — and the reason it tastes of the delta is that the Ramsar listing for the Sundarbans Reserved Forest identifies the site's role as a fish spawning and nursery area for the wider region.

The answer, with local context

Bangladeshi food is a rice-and-fish cuisine before it is anything else, and the geography is the explanation rather than a flourish. The Ramsar information sheet for site 560 records species including the critically endangered River Terrapin and the rare Ganges shark, Glyphis gangeticus, alongside the site's function as a nursery — a reminder that the delta's productivity is the same system that feeds the national menu.

Order in layers. Shorshe ilish, hilsa in mustard sauce, is the dish the country argues about. Bhuna khichuri, rice and lentils cooked down with spice, is monsoon food and is still served as such. Panta bhat — rice soaked overnight in water, eaten with green chili, onion and fried fish — belongs to the Bengali new year in April. Chingri malai curry uses prawns and coconut milk and is a coastal dish. Beef rezala and kacchi biryani are Old Dhaka's contribution, and mishti doi, fermented sweet yogurt in a clay pot, is the standard close to a meal. In Khulna and the southwest, river fish dominates; in Dhaka, meat and biryani do.

Two practical constraints come from the US International Trade Administration's Bangladesh guide, last published on 19 March 2026: tap water is not safe to drink, with bottled water generally safe, and food-borne illness is common, with the advice to wash, soak, peel and thoroughly cook. The same guide notes a Sunday-to-Thursday workweek and banks open 10:00 AM to 4:00 PM, Sunday to Thursday — useful because street food economies run on cash.

Picture the place

A Dhaka biryani house serves out of a sealed clay or metal degh that is opened in front of you, and the steam that comes off it carries the ghee and the whole spice before any of it reaches a plate.

The easily missed detail

The health paperwork for Bangladesh is unusually specific, and it is about food and water. The US Department of State's country information lists hepatitis A and typhoid as required vaccinations for Bangladesh, with hepatitis B, Japanese encephalitis and rabies recommended, and proof of yellow fever vaccination needed only if you arrive from a risk country and are over 1 year old. Hepatitis A and typhoid are both food- and water-borne — so the requirement is effectively a statement about how you will be eating.

A practical rhythm

  • Breakfast — Paratha and dal from a street kitchen, with bottled water rather than tap, per the ITA guidance.
  • Lunch — Fish and rice, and in the southwest specifically river fish rather than sea fish.
  • Late evening — Old Dhaka's biryani and kebab streets, which run long after the Sunday-to-Thursday business day has ended.

What could complicate the plan

Money moves awkwardly. The State Department requires you to declare US$5,000 or more on entry, says you cannot leave with more US dollars than you declared, and caps what you may take out at 5,000 Bangladeshi taka — so plan to spend your taka rather than carry it home. The ITA guide also reports that counterfeit medications have been reported, with medicine from major pharmacies and hospitals generally reliable, which matters if a food-borne illness sends you looking for a remedy.
