Cappadocia / Türkiye Food and drink
Where should I eat in Cappadocia, and which local food or drink is worth trying?
The short answer
Eat in the villages inside the park and drink the local wine — IUCN's assessment of the World Heritage property records vineyards and grazing as a live land use inside the site, scattered across 5 to 15 percent of it.
The answer, with local context
Cappadocia is one of the few World Heritage landscapes where agriculture is listed as part of the site rather than outside it. IUCN's threat table groups annual and perennial non-timber crops with animal farming, ranching and herding — specified as grazing and vineyards — and rates them Low, scattered across 5 to 15 percent of the property. A Low rating on a site whose other pressures are rated High is the useful signal here: farming is the land use conservation assessors are least worried about, and it is what the valleys have supported for centuries.
That continuity is also what the inscription recognizes. UNESCO describes Cappadocia as an outstanding traditional human settlement, with troglodyte villages woven into the same rock as the churches — so the places to eat are inside a lived-in landscape rather than at a visitor center on its edge.
Nationally, the US International Trade Administration's Türkiye agriculture profile, published on 29 January 2026, sets the context: nearly a quarter of the population is employed in agriculture, half the country is agricultural land, and Türkiye is the world's leading producer of both apricots and hazelnuts. Wheat, sugar beets, milk, poultry, cotton and tomatoes are among its other major products. Those are the staples behind Anatolian cooking generally, and they explain why bread, dairy and tomato are the constants on a Cappadocian table.
Picture the place
The vineyards sit in the valley floors and on the lower slopes between the tuff formations, on volcanic soil, in the same ground the villages were hollowed into — which is why a meal here is often served a short walk from the vines rather than a drive from them.
The easily missed detail
The thing most visitors miss is that eating inside the inscribed area is eating inside a National Park whose whole territory carries that status, with many individual monuments separately protected. Village restaurants and wineries operate under that regime. UNESCO's own assessment notes incompatible structures as one of the site's reported problems, which is why new construction in the valleys is contested and why the premises are often converted rock-cut spaces rather than new buildings.
A practical rhythm
- Lunch — In a village inside the property, where grazing and vineyards are recorded as part of the land use.
- Afternoon — Wine. Vineyards fall inside the IUCN category rated Low and scattered through 5 to 15 percent of the site.
- Dinner — The national staples of wheat, dairy and tomato that the ITA profile lists among Türkiye's major products.
What could complicate the plan
The CDC's food and water guidance puts fully cooked food served hot in its lower-risk group, along with pasteurized dairy, fully cooked meat and eggs, and fruit you peel yourself; it places unpasteurized milk and dairy, raw or undercooked meat, and food held without good refrigeration in the higher-risk group. For anything carried on a long day out, it advises keeping perishable food at 40°F (4°C) or below and not leaving it at room temperature for more than 2 hours. Practically, that is the main constraint on a picnic lunch in a valley in summer. On documents, the FCDO's 150-day minimum passport validity for Türkiye is unusual enough to catch travelers whose passports still have four months left.
What to do next
The things-to-do question in this chapter names the valleys and underground cities you will be eating between, and the seasonal question covers crowding and conservation pressure.
