Havana / Cuba Food and drink

Where should I eat in Havana, and which local food or drink is worth trying?

The short answer

Eat in the privately run paladares rather than state restaurants — they are the outlet most US travelers are using when they travel under OFAC's support-for-the-Cuban-people authorization, and they are where Cuban home cooking is actually served.

The answer, with local context

Paladares grew out of the legalization of self-employment in the early 1990s, when Cubans were permitted to run small restaurants from their own homes. They remain family businesses, often a few tables in a converted front room or on a roof terrace, and they set their own menus from whatever the market has. This is the practical shape of one of the 12 travel categories OFAC authorizes under 31 CFR 515.560(a): spending that supports Cuba's private sector rather than state enterprises.

What arrives on the plate is Spanish and West African cooking worked through four centuries of island agriculture. Ropa vieja is shredded beef stewed down in tomato, onion and pepper. Moros y cristianos pairs black beans with white rice cooked together rather than served apart. Lechón asado is whole roast pork, the centerpiece of any family occasion. Tostones are green plantain, sliced, fried, flattened and fried again. Yuca con mojo brings cassava under garlic and sour orange.

Drinks are where Havana's reputation is most earned. Cuba's light rum tradition is recognized by UNESCO on its Representative List of the Intangible Cultural Heritage of Humanity, inscribed as the knowledge and techniques of the island's light rum masters — a craft designation, not a brand. That lineage sits behind both the mojito and the daiquiri. Café cubano, a short, intensely sweet espresso, is served at street windows all day.

Payment is the thing first-time visitors get wrong. Cuba retired the convertible peso on January 1, 2021, leaving the Cuban peso as the single national currency. US sanctions mean US-issued cards are generally unusable, so cash brought in is the working method.

Picture the place

Many paladares are upstairs, reached through a street door and a dim stairwell, and open onto a terrace above the roofline — which is why so much of the eating in Old Havana happens with the harbor in view and the noise of the street a floor below.

The easily missed detail

The CDC's current guidance for Cuba names a Level 2 chikungunya outbreak notice posted September 26, 2025, and recommends typhoid and hepatitis A vaccination for most travelers, both food- and water-borne. It also advises against swallowing water while swimming and notes that leptospirosis can spread through contaminated water, food or mud. In practice that argues for bottled or treated water and for hot, freshly cooked food — which is what a paladar kitchen serves anyway.

A practical rhythm

  • Breakfast — Casa particular hosts usually cook it; tropical fruit, eggs and bread, with coffee strong enough to need the sugar it comes with.
  • Main meal, mid-afternoon — Cuban families eat their largest meal well after noon, and paladar kitchens are at their best then.
  • Evening — Mojitos and live son in the old city; the bars around Plaza Vieja run late and the music is usually free with a drink.

What could complicate the plan

Supply is genuinely variable. Paladar menus are shorter than they are printed, and a listed dish may simply not be available that day. Reservations are normal at the better-known places because the rooms are small. For US travelers, record-keeping obligations attach to the OFAC category you travel under, so keeping receipts from private businesses is part of the trip rather than an afterthought.

What to do next

Read the Havana things-to-do answer in this group for the walking route the old city's plazas and forts suggest, and the when-to-visit answer for the dry-season months when eating on a roof terrace is a pleasure rather than an endurance test.
