Lithuania country guide Food and drink
What local dishes should I try in Lithuania, and where should I look for them?
The short answer
Cepelinai, šaltibarščiai and curd cheese — and the one Lithuanian food with an EU protected name behind it is Lietuviškas varškės sūris, registered as a Protected Geographical Indication by Commission Implementing Regulation (EU) No 1111/2013 of 5 November 2013 under product class 1.3, cheeses.
The answer, with local context
That registration is the firmest fact in Lithuanian gastronomy, and it covers exactly the thing you will be offered most often. Curd cheese turns up eaten plain with fresh vegetables and jam, and folded into pies — the national tourism agency, Lithuania Travel, describes both uses. The same curd fills cepelinai, the potato dumplings named for zeppelins, which are also made with meat or mushrooms.
Šaltibarščiai is the summer counterweight: a chilled beetroot soup, bright pink, served cold. Vilnius runs a Pink Soup Fest on 1 June, and Lithuania Travel records that the 2023 edition served roughly 2,995 bowls to about 15,000 attendees. That is a single-day festival built around one soup, which gives you a sense of how seriously it is taken.
Beyond those, the agency names šakotis — a layered cake baked over an open flame into a spiked tree-trunk shape, reserved for celebrations — along with soft rye black bread as a staple of the ordinary meal, and apple cheese, a sweet made from apples and sugar. For drinking there is gira, a fermented bread-and-herb kvass that is sweet, tangy and fizzy, and birch sap, tapped from trees in spring and only mildly sweet. A Druskininkai Cheese Festival is typically held in August, which pairs neatly with the protected curd cheese.
Picture the place
Šakotis is baked over an open flame rather than in a tin, and the batter is built up in layers as it turns, which is where the spiked, tree-trunk shape comes from. It is a cake whose form is a record of how it was cooked.
The easily missed detail
Seasonality in Lithuania is agricultural, not just culinary. Birch sap is a spring drink because that is when the trees run, and the spring window is short: under the Lithuanian Hydrometeorological Service's 1991–2020 normal, March averages a mean of 0.9°C (33.6°F) and April climbs to 7.2°C (45.0°F), with April the driest month of the year at 37 mm (1.5 inches). That brief thaw is the whole birch-sap season, and it sits weeks before the 1 June soup festival.
A practical rhythm
- Markets and halls — Curd cheese, rye bread and apple cheese are market goods rather than restaurant dishes, so a market visit is where the protected-name cheese actually appears.
- Summer, outdoors — Šaltibarščiai is a hot-weather dish and Vilnius builds a 1 June festival around it; August brings the Druskininkai cheese event.
- Celebration tables — Šakotis is a festive bake, not an everyday dessert, so look for it where a celebration is happening.
What could complicate the plan
The US International Trade Administration notes that ATMs, labeled "Bankomatas," are easy to find in Lithuanian towns and cities but less common in rural areas, and that retailers do not accept traveler's checks — relevant if you are buying curd cheese and bread at a village market rather than a city hall. It also records a 40-hour, 5-day working week with service institutions generally open 9 a.m. to 6 p.m. and a 1-hour lunch break, which sets the practical shopping day. On the food-safety side, the CDC's Yellow Book 2026 places unpasteurized milk and dairy products in its higher-risk category and pasteurized dairy among the lower-risk ones, a distinction worth knowing in a country whose signature protected product is a fresh cheese.
What to do next
The Lithuania when-to-visit answer gives the monthly sunshine and rainfall figures that decide whether an outdoor market day will be pleasant, and the places-and-experiences answer covers Kaunas and the coast, where the regional cooking differs from Vilnius.
