Panama country guide Food and drink

What local dishes should I try in Panama, and where should I look for them?

The short answer

Sancocho, ceviche and the fried-dough breakfast breads — and the places to look for them are the capital's seafood market and the fondas of the Historic District of Panamá, the walled town inscribed by UNESCO under criteria (ii), (iv) and (vi).

The answer, with local context

Panamanian cooking is isthmus cooking: a Pacific fishery on one side, a Caribbean one on the other, and a Spanish colonial grain-and-root base underneath. Sancocho, the chicken and root-vegetable soup seasoned with culantro, is the dish most often served as the national one. Ceviche here is usually corvina, cured in lime and served cold in a cup. Breakfast runs to hojaldras, fried dough eaten with coffee, and tortillas de maíz that are thick fried corn cakes rather than the thin Mexican kind. Carimañolas are yuca shells stuffed with seasoned meat and fried. None of that is restaurant-menu food exclusively; most of it is market food and neighborhood fonda food.

Where to look is partly a heritage question. The Historic District of Panamá, with the Salón Bolívar, was extended in 2003 to form a single World Heritage property with the archaeological site of Panamá Viejo, under Decision 27 COM 8C.40. That walled district is where the small inherited eating rooms are, in ground floors of buildings that exist in their current form because the city rebuilt there after abandoning the original site on the open shore.

Season shapes supply more than it shapes menus. The capital's dry months — January to mid-April by the national meteorological service's definition — are the months with least rain: 26.4 mm in January, 10.0 mm in February, 15.2 mm in March. From May the figures jump to 233.0 mm and stay high, peaking at 329.6 mm in October. Small-boat fishing and the overland movement of produce are both easier in the dry half, and city markets reflect it.

The roots and grains under all of this have a published scale. Panama's Ministry of Agricultural Development closed the 2022–2023 crop year, which ran from 1 May 2022 to 30 April 2023, with 1,832 hectares planted to ñame and 415,707 quintales harvested, and 1,927 hectares of yuca returning 513,887 quintales. Mechanized rice took 88,401 hectares for 8,761,650 quintales at an average yield of 100.9 quintales per hectare, and maize 19,371 hectares for 2,043,132 quintales. Those four crops are what sits under the sancocho and beside the fried fish, and the rice figure is why a plate arrives with it whether you asked or not.

Picture the place

Panama City's seafood market sits on the Pacific waterfront, where a tidal range of several meters leaves boats sitting on mud at low water — the catch arrives on a schedule set by the tide rather than by opening hours, and the stalls are busiest early.

The easily missed detail

The country's two coasts are not interchangeable kitchens. The Pacific side, where the capital and the main fishing fleet sit, is the side with a pronounced dry season; the Caribbean coast stays wet. That is why coconut appears so heavily in Caribbean-side cooking — rice cooked in coconut milk, fish in coconut sauce — and far less in the Pacific-side repertoire that dominates Panama City. Eating across the isthmus means eating two cuisines, and the drive between them is short.

A practical rhythm

  • Early morning — The seafood market is a dawn operation; ceviche cups are a breakfast item there, not a late-night one.
  • Midday — Fondas in the Historic District serve a set plate at lunch, which is when sancocho is most reliably on.
  • Evening — The rebuilt walled district is compact enough to eat your way across on foot within the inscribed area.

What could complicate the plan

Rain is the constraint on market mornings, and from May through November the capital averages more than 170 mm a month. Panama's heritage sites outside the capital — Portobelo-San Lorenzo, Coiba and the Talamanca Range-La Amistad reserves — are not day trips from a city food itinerary, and all three have been under continuous state-of-conservation reporting to the World Heritage Committee. If you want the Caribbean coconut-based cooking, budget it as a separate leg rather than an afternoon.

What to do next

The Panama when-to-visit question in this group sets out the dry-season dates in detail, and the places-and-experiences question covers the regions where the Caribbean kitchen takes over.
